My hour-long drive home from work normally consists of planning out dinner for the night. Last night I wasn’t really in the mood to do a lot of cooking, but also not in the mood to spend money to eat out. I ran over a list of items that we had in the house:
I decided to create a new favorite recipe from the items laying around the house & some last minute things picked up at the store on the way home. Things I got from the store (about $10, but then I got beer $3 & some mini ice cream sandwiches $3 so my total was $16)
Breakfast Tacos for dinner!
You could also do without the tortillas to reduce calories but with soy-rizo sautayed with onion, mushrooms and spinach (a frozen package I found in the freezer) and 4 eggs scrambled they are pretty healthy. With some added cheese, warmed up black refried beans, diced tomatoes and lettuce on-top these were tasty & low in calorie too! This recipe makes 4-6 servings, depending on how big your servings are. At 4 servings for this recipe it is about 300 cal without the tortillas and still tons for leftovers!
I forgot to take a picture, but these are definitely worth trying if you want something super fast, easy and delicious! I added some extra hot sauce and cayenne pepper for some heat, but even a few tablespoons of salsa would be a great addition. We capped off dinner with 2 mini ice cream sandwiches from Trader Joes. I am feeling great about cooking healthier meals Trevor, who is a HUGE meat eater, still loved these tacos!
